The degree programme is designed to offer graduates the advanced knowledge and professional skills required to assume roles connected with the correct application of diet, nutrition and the related regulations currently in force.

The degree course presents a holistic and systemic vision of food quality in a training that is based on a thorough knowledge of food, consumers and nutritional problems. It is specifically proposed to provide students with knowledge of the constituent elements of food quality and the ability to link and integrate them into a profile appropriate to meet the needs of the general population, specific groups and individuals, while respecting at the same time needs and constraints of the production system.

This degree programme trains professional nutritionists qualified to operate at all levels of the food system (from the formulation of foods to their distribution, from catering to the development of healthy styles of eating), in order to promote human health through a distinct approach integrated with that of the health system.

By way of example, graduates possess competences in:

  • the development, formulation and optimisation of food products with a high nutritional value (functional foods, foods intended for particular diets with special medical uses);
  • the management of labelling and information relating to nutritional claim and, more generally, communication aspects;
  • research into and the documentation of the health effects of foods (health claims);
  • the evaluation of nutritional and sensory quality and control of the safety and suitability of foods for consumption;
  • the proposal and testing of correct dietary protocols targeted at the maintenance of optimal standards of health;
  • the preparation and management of food education programmes for the general population or for specific groups; - assistance with food consumption surveys and nutritional monitoring programmes;
  • market research and related activities in connection with food production;
  • research and development in the human diet sector; - quality and safety-related training for operators in the food and agriculture sector;
  • teaching technical and scientific subjects in schools in relation to food and nutrition.

In order to be admitted to the programme, you must have adequate basic knowledge. More specifically: a university degree obtained by 31 December 2020, in classes L-26, L-2, L-13, L-29, in health professions classes SNT3 (Dietitian only) ) and SNT4 (Environment and workplace prevention technician only), in classes 20, 1, 12 and 24 under the previous regulations, as well as class 3 for health professions. In addition to a degree in the above classes, at least 50 CFU as additional curricular requirements in the following scientific academic fields (biology, biochemistry, nutrition, hygiene, food technologies and microbiology): BIO/01, 03, 09 , 10, 12, 13, 16, CHIM/06, CHIM/10, AGR/15, AGR/16, MED/07, MED/42, MED/49 and similar.

English language proficiency at B1 level.
Candidates should have a knowledge of English at or above B1 level, according to the Common European Framework of Reference for Languages (CEFR). English language proficiency is assessed by the SLAM - University Language Centre during the admission procedure based on:

  •  a language certificate obtained no more than 3 years earlier, at B1 or B2 or higher level (for the list of language certifications recognized by the University, see the website:   The certification must be uploaded when submitting the online application; 
  •  the English level achieved during a Bachelor's degree programme of the University of Milan through the SLAM (and/or a computer-based test). Certificates must be less than four years old, and will be checked by our offices without the candidate having to submit any attachments; 
  •  the admission test delivered by the SLAM, which will take place in via Colombo 46 on 8 September and 4 November. Two sessions are scheduled on each date: at 2 pm and 3:30 pm. All those who do not submit a valid certificate or do not prove to meet the required proficiency will be invited to take the test through the admission procedure.

In case of failure to pass the test, the candidate is not admitted to the Master's degree programme and cannot access further tests. 

Skills assessment
Admission to the degree programme in Human nutrition and food science is capped pursuant to Law no. 264 of 2 August 1999.
The Academic Board will appoint an admission commission made up of at least three teachers of the degree programme to conduct admission procedures. 
Access to the programme is regulated by a compulsory test, aimed at ascertaining the initial skills of the students. Skills will be assessed for 4 areas: 1) biochemistry, biology and human physiology; 2) properties of nutrients and nutrition basics; 3) principles of food preservation and processing; 4) main microbiological aspects related to the quality and safety of food preparation, preservation and distribution. All students, both graduates and undergraduates, who have applied for admission within the established deadlines must take the test. 
Since this is a selective test, the programme will admit only students who a) will obtain a score higher than the threshold determined by the admission commission, b) will rank among the winners in the merit ranking based on the test score, which will be published in the following days, and c) will meet all the admission requirements (university degree, 50 relevant CFU, and B1 in English) by 31 December 2020.  
In the event that fewer than 150 students pass the admission test, a second admission test will be held, the procedures for which will be set out in the call for applications. In any case, all admission requirements (degree, 50 relevant CFU and B1 in English) must be met by 31 December 2020. 

To facilitate access to the Master’s degree programme, a single course is provided specifically for students who intend to enrol, to fill their gaps or improve their skills for the purposes of admission to the programme ( for further information).

Candidates must pass the admission test, on the date set out in the call, in order to be included in the ranking. 
All students, even those who transfer from other universities or who have taken one or more exams of the Master's degree programme as a single course, must take the test and rank among the winners in order to enrol in the degree programme in Human nutrition and food science.

Non-EU students will be selected on the basis of qualifications and an interview (possibly online), according to the procedures that will be set out in the call for applications.

ERASMUS+ opportunities, access procedures and selection criteria are described in a specific call for applications for the Food area. We have selected 40 partner universities throughout Europe based on their affinity with this programme of study.
The activities that can be developed abroad mainly concern the preparation of experimental degree theses and include nutritional assessment, eating behaviour detection, nutrition applied to various population targets, nutritional profiling of food products, in vitro and in vivo food-effect studies, mechanisms of action of dietary compounds, role of diet in shaping the gut microbiota, production technologies and food microbiology.

The learning agreement is defined in cooperation with the study programme's Erasmus manager, both for the choice of exams and the organization of the internship at the partner university. Before completing the learning agreement, you must obtain the formal approval of the exams to be taken at the host university by teachers holding equivalent or similar courses at the University of Milan. The conduct of an experimental activity abroad, as part of or the entire internship activity, requires a letter of consent from a teacher of the partner university and the formal approval of the objectives, the project and the internship period by a teacher of the study programme acting as supervisor.

At the end of the study period abroad, you will deliver the transcript of records issued by the host university and obtain credit and grade recognition by resolution of the Academic Board.
We actively participate in the Erasmus+ Placement Programme, providing student mobility opportunities for thesis work in highly qualified facilities (universities, public and private research centres) that are selected also based on individual study programmes.

The tuition fees for students enrolled in Bachelor's, Master's and single-cycle degree programmes are divided into two instalments with different calculation methods and payment schedules:

  • The amount of the first instalment is the same for all students
  • The amount of the second instalment varies according to the ISEE University value, the degree programme and the student status (on track / off track for one year or off track for more than a year) 
  • An additional fee is due for online programmes
